Avocado Green Goddess Dip

Can a dip be a meal? I say yes…

Goddess recipe

Ingredients:

  • 1 ripe avocado

  • 2 TBS whole milk yogurt (or any non-dairy plain yogurt or sour cream)

  • 1 tsp Dijon mustard

  • 2 scallions, white and green parts, roughly chopped

  • 6-8 large basil leaves, chopped

  • 2 TBS chopped dill leaves

  • 1 TBS fresh lime juice

  • 1 TBS fresh lemon juice

  • 1/4 cup extra virgin olive oil

  • 1/2 tsp sea salt

  • ground pepper to taste

Instructions:

Scoop avocado flesh out of its skin and discard pit and skins. Put all ingredients in a blender and blend until smooth. Serve with fresh vegetables, toasted pita, whatever you like.

Note: OK if some flecks of herbs remain, but this is meant to be a smooth, whipped consistency. Do not over blend to the point of heating the avocado. This dip is best served the same day, though you can seal and refrigerate if serving later.
