Herbed Ricotta Spread or Dip

It’s a spread! It’s a dip! I like to serve this with crudités or spread it thickly on toast and top with thinly sliced radishes.

Ricotta Recipe

Makes just over a cup—plenty for a crudité spread

Ingredients:

  • 1 cup fresh ricotta cheese

  • 1 tablespoon minced fresh chives

  • 1 tablespoon minced fresh parsley or chervil

  • Extra-virgin olive oil (the better quality and more flavorful, the better)

  • Salt and freshly ground pepper to taste

Instructions:

Stir ricotta and herbs together, swirl in a couple glugs of olive oil and sprinkle with salt and pepper. Taste, and add more of what you think it needs. Serve immediately or keep a couple of days in the refrigerator.
