Serves 2 - multiply for more
Ingredients:
1 TBS. unsalted butter
1 - 2 bulbs spring garlic aka green garlic (depending on size), bulb and bottom part of stem very thinly sliced
2 tsp. white miso
2 handfuls pea greens
Fresh lemon juice
Sesame seeds or furikake for garnish
Egg to serve (optional)
Instructions:
In a medium skillet, heat butter until just melted then add sliced spring garlic. Sauté over gentle heat for 5 minutes or so, then add miso and a few drops of water. Stir around - should be a thick liquid. Throw in the pea greens and toss to coat in the miso mixture. Squeeze in a generous amount of lemon juice, toss some more and serve when just barely wilted—the miso sauce should be like a light glaze, with the green garlic slices dispersed evenly. Add a fried or poached egg, if you like, and sprinkle with toasted sesame seeds or furikake.
