Smoked trout with crackers and pickled ramps

Makes about 1 cup

Ingredients:

  • 8 ounces smoked trout fillets

  • 1 tablespoons pickle juice (lemon juice works well, too)

  • 2 tablespoons crème fraîche or sour cream

  • 3 tablespoons mayonnaise

  • Chopped fresh chives

  • Chopped fresh dill

  • Ground pepper to taste

  • More salt if needed (smoked trout usually contains enough salt, so you probably won’t need it)

Instructions:

Remove and discard skin and any large bones (or find another use for skin). Crumble or chop trout and put it into a bowl. Add pickle juice, crème fraîche, mayo and mash them together thoroughly with a fork until mixture is smooth with small pieces of trout (should be spreadable and dipable). Stir in chopped herbs at the end. Taste, and add ground pepper if you like, and a little salt if you need it; most smoked trout is fairly salty as it is. If you’d like a creamier mixture feel free to add a bit more mayo and/or crème fraîche. Serve with crackers or toast, radishes, and something tart like cornichons or little pickles (home pickled ramps shown above).
